I would like to take this opportunity to give you reasons why Trader Joe’s is the answer to your shopping needs.

If you are looking for a store that provides not only great, courteous customer service but also a wealth of unique products, Trader Joe’s is an experience you will revisit time and time again.  There is never a time that I have shopped here that I haven’t marveled at the friendly, helpful service from the workers in this store.  You will always leave with a smile on your face.

Too often we are ready to offer our negative comments on things in our lives.  I personally feel that we should also be ready to testify to those experiences we have that make us glad for where we have been and how we have been treated.  My daughter and I encountered just such a time at Trader Joe’s on Highway 92 in Roswell, Georgia this past Wednesday.

There was an older couple who made the 100 mile trip from Blue Ridge.  To me that speaks volumes of the store. We are among many customers who look forward to our next shopping trip.

Thank you Luke for being an awesome cashier and making us feel special!

We live in Hickory Flat, Georgia, approximately ten miles away, and our only complaint with Trader Joe’s is that there is not a store closer to where we live!

The store offers fresh produce at reasonable prices, great baked goods, such as different artisan breads, bagels and pies.  Visit Trader Joe’s to learn more about the wide range of products and recipes.

Below are just a few of the items that are always on our grocery list:

  • The best tasting low fat Tuscano Marinara sauce sold under the name of Trader Giotto’s
  • Sweet Chili sauce (that tastes awesome on almost anything you are cooking)
  • Various spices including one called 21 Seasoning Salute
  • Quality olive oils and vinegars, including a popular balsamic vinegar
  • A wide assortment of rices, couscous, and quinoa
  • Great soaps and health items
  • Coffees and teas for any connoisseur
  • A very wide variety of cheeses from around the world
  • Cookies, Crackers and Candies

Trader Joe’s has a wine department that is not rivaled by any I have seen at prices that will thrill your wallet.  You can always find Trader Joes/Charles Shaw variety of wines that sell for $2.79 and recently we have purchased one of their “Hustle Buy” deals of Trebbiano Pino Grigio (white) and Sangiovese (red), both from Italy that are wonderful.  These sell for $2.49.  Of course, these would not be appropriate to give to children, but you must admit these prices are less than what you would pay for a bottle of juice (you can also find great juices here)!  You always hear it said you should cook with wine that you would want to drink … and now you can do it cheaper than what you pay for cooking wine at  your local grocery store.

As you can see from the list above, in addition to finding great frozen seafood, vegetables, eggplant Parmigiana, relishes, multi-grain pancake mix, and frozen desserts, these are all great reasons why Trader Joe’s is the answer to your shopping needs. I hope that this article will stir your curiosity to see if there is a store in your area.  I personally want to thank Trader Joe’s for being a ray of sunshine in my life and reminding me that great customer service still exists!

Do You Want to Make Tree Trimming Easier? Use the Black and Decker NLP1800 Cordless Chain Saw! From past personal experience I have learned that trimming trees and hedges can be an over-whelming task. See one of my first encounters with “trimming” in my previous post “Learn How To Conquer Yard Work.” I quickly learned that a week of manually cutting back these hedges with a hand tree saw was not the way to go. Having spent an exhausting week trimming the Variegated Chinese Privet in my backyard and getting the wise suggestion from my son-in-law, I looked into purchasing a chain saw. In the beginning ....

One Saturday afternoon we tackled the job. I was blessed that my son-in-law opted to do the cutting down of all of the limbs. I assisted in piling all the cuttings in a rather larger pile. After about two hours in the intense heat and wearing down the batteries, we decided to finish the rest of the job on Sunday afternoon.

By Sunday afternoon the tall hedges were all cut down. However, that most definitely was not the end of this chore. I spent a good two weeks using this awesome chain saw cutting up limbs and trimmings and bagging them. The Black and Decker NPL1800 proved very helpful with this as well. It works well on trimming the smaller growth on your trees and bushes too. This chain saw was not only useful in cutting down the hedges, but when it came to cutting up all of the debris it made my job a lot easier.  I know that if I had tackled this job manually …. I would still be cutting.  I am grateful that my son-in-law suggested a chain saw.  It made light work of a really overwhelming project

I am a 65 year old, semi-retired grandma and if I can handle this chain saw  … anyone can.  I am now off to tackle a very large bush that has grown enormously high around a tree in my back yard. I am so grateful for this tool.

Realty Trac Inc. is a foreclosure tracker and someone who definitely has their finger on the pulse of the mortgage industry.  Their prediction is that lenders will be exercising foreclosure proceedings on more homes during 2011 than at any other time during the U.S. housing meltdown which began in 2006. Although my heart is saddened for those families that are losing their homes, I want to ask you, do you want to make money with foreclosure cleanouts?

It is expected that the rate of foreclosures will remain elevated through 2011.  This will cause home prices to decrease about another five percent before it bottoms out.

Continued high unemployment rates, falling home prices and stricter credit standards are detrimental in jump-starting the housing market.  People are very hesitant to buy a home, even though mortgage rates are the lowest on record since 1991.

In addition to anticipated rising foreclosure rates, lending organizations, such as Bank of America, are predicting that they unemployment rate is going to rise in 2011, reaching 10.1% by the second quarter.  Taking this information into consideration and the fact that there are many older people that are unable to find a replacement for their previous jobs, many people are forced to take an early retirement.

An early retirement puts a greater strain on these “senior citizens” being able to financially keep their heads above water.  Social Security checks are helpful, but in no way will these payments cover the expenses of a household.  This will force many people in this position into foreclosure.

Vegetables:

  • Beans, green:Stem and break beans into 1-inch pieces.Blanch. Dry 6-12 hours until brittle.
  • Beets: Cook and peel beets. Cut into 1/4-inch pieces. Dry 3-10 hours until leathery.
  • Broccoli: Cut and dry 4-10 hours.
  • Carrots: Peel, slice or shred. Dry 6-12 hours until almost brittle.
  • Cauliflower: Cut and dry 6-14 hours.
  • Corn:Cut corn off cob after blanching and dry 6-12 hours until brittle.
  • Mushrooms: Brush off, don’t wash. Dry at 90 degrees for 3 hours, and then 125 degrees for the remaining drying time. Dry 4-10 hours until brittle.
  • Onions: Slice 1/4-inch thick. Dry 6-12 hours until crisp.
  • Peas: Dry 5-14 hours until brittle.
  • Peppers, sweet: Remove seeds and chop. Dry 5-12 hours until leathery.
  • Potatoes: Slice 1/8-inch thick. Dry 6-12 hours until crisp.
  • Tomatoes: Dip in boiling water to loosen skins, peel,slice or quarter. Dry 6-12 hours until crisp.
  • Zucchini: Slice 1/8-inch thick and dry 5-10 hours until brittle.

Fruits:

  • Apples:Peel, core and slice into 3/8-inch rings, or cut into 1/4-inch slices. Pretreat and dry 6-12 hours until pliable.
  • Apricots: Cut in half and turn inside out to dry. Pretreat and dry 8-20 hours until pliable.
  • Bananas: Peel, cut into 1/4-inch slices and pretreat. Dry 8-16 hours until plialbe or almost crisp.
  • Blueberries: Dry 10-20 hours until leathery.
  • Cherries: Cut in half and dry 18-26 hours until leathery and slightly sticky.
  • Peaches: Peel,halve or quarter. Pretreat and dry 6-20 hours until pliable.
  • Pears: Peel, cut into 1/4-inch slices, and pretreat. Dry 6-20 hours until leathery.
  • Pineapple: Core and slice 1/4-inch thick. Dry 6-16 hours until leathery and not sticky.
  • Strawberries: Halve or cut into 1/4-inch thick slices. Dry 6-16 hours until pliable and almost crisp.

You can pre-treat your fruit with lemon juice or ascorbic acid so it won’t darken while you are preparing it for drying. Just slice the fruit into the solution and soak for 5 minutes.

Dried fruits can also be used to make beautiful wreaths and swags for gifts combined with cinnamon sticks and bay leaves.  These last for years and you can refresh their fragrance with a spritz of cinnamon oil.

Here is how you would prepare your fruits and vegetables for use in your recipes:

  • Apples: Add 1 1/2 C. warm water to 1 C. apples and soak for 1/2 hour.
  • Beans, green: Add 2 1/4 C. boiling water to 1 C. beans and soak for 1 1/2 hours.
  • Beets: Add 2 3/4 C. boiling water to 1 C. beets and soak for 1 1/2 hours.
  • Carrots: Add 2 1/4 C. boiling water to 1 C. carrots and soak for 1 hour.
  • Corn: Add 2 1/4 C. boiling water to 1 C. Corn and soak for 1/2 hour.
  • Onions: Add 2 C. boiling water to 1 C. onions and soak for 1 hour.
  • Peaches: Add 2 C. warm water to 1 C. peaches and soak for 1 1/4 hour.
  • Pears: Add 1 3/4 C. warm water to 1 C. pears and soak for 1 hour.
  • Peas: Add 2 1/2 C. boiling water to 1 C. peas and soak for 1/2 hour.
  • Potatoes: Add 1 1/2 C. boiling water to 1 C. potatoes and soak for 1/2 hour.

Many people enjoy meat jerky. Jerky does not store as long as fruits and vegetables. For storage longer than a month you will want to consider storage in the freezer or refrigerator. To aid in the curing of jerky, meat must be marinated in salt and spices. In days of old people used 1 1/2 cups pickling salt to 1 gallon of water and soaked the meat strips in this for a couple of days.  Below are several marinade recipes for you to choose from. You will want to marinade the meat strips overnight.

Jerky Marinade No.1

  • 1/4 C. Soy sauce
  • 2 T. Worcestershire sauce
  • 1/2 t. pepper
  • 1/2 t. garlic powder
  • 1 t. liquid smoke
  • 1 t. salt

Jerky Marinade No.2

  • 4 t. salt
  • 1 t. pepper
  • 1 t. chili powder
  • 1 t. garlic powder
  • 1 t. liquid smoke
  • 1/2 C. water

Jerky Marinade No.3

  • 1 C. ketchup
  • 1/2 C. vinegar
  • 1/4 C Worcestershire Sauce
  • 2 t. dry mustard
  • 1 t. salt
  • 1/2 t. pepper

In checking the shelf life of dehydrated fruits and vegetables most resources recommended one year.  Be sure your items are stored in a dry environment.

This time of the year when we, as Christians, think about the birth of Christ I hope throughout the upcoming year we will take it one step further and think about whether we are ready for His return. Below is a revised version of “Twas The Night Before Christmas” .

I hope that you and your family have a beautiful Christmas. May it be one where we all look at others through the eyes of Christ and share his love, not just on Christmas, but throughout the year. We have so very much to be grateful for. Jesus was born into this world to be an example to us and to die for us. What a true gift He was. This should fill our hearts with much joy.

One of the most surprising benefits I’ve discovered for being engaged to a gal from the Middle East, other than the vast cultural exchange, is the cooking.

Oh, yes ladies… my gal COOKS!

Which is good since I am a lousy cook. : )

Hanna enjoys it… and she brings a Middle Eastern flair to some really boring fitness/bodybuilding foods that I want to share with you today.

Here’s just two quick tips from Hanna on making the ultimate in “boring” foods — egg whites and tuna (yuck) — taste incredible.

TIP 1:
Lively Egg White Omelette

Let’s face facts: Egg whites suck. At least that’s what I USED to think until Hanna decided to experiment with my morning omelette.

Now I eat this stuff like it was candy.

Here’s what she does:

1. She cooks the veggies separate from the egg whites. You’d think this would be common sense, but I never did it and I’ve seen a lot of people just toss it all in together.

2. Add 1/2 teaspoon of olive oil with 1/2 teaspoon of coconut oil to the veggies. This alone improved the taste tremendously.

3. Add 1/2 egg yolk to the veggies after cooking for 1 minute. This, again, is primarily for taste.

4. Garlic! If you love garlic, here’s your chance. Garlic ROCKS in egg white omelets.

5. Use Pam or another non-stick spray for the egg whites and cook them like you would a normal omelette. Then pour the almost-cooked veggies in the middle. Do the omelette dance.

6. Here’s the SECRET SAUCE… literally. This will sound nuts until you try it:

Shrimp Cocktail Sauce

Okay… Hanna’s bright, but this was an accident. She thought it was salsa. But I’ve NEVER gone back to salsa after stumbling on this incredible treat! I have no idea why it tastes so good, but it makes the omelette.

Try these tips and see if your egg white omelette doesn’t become your favorite meal of the day.

TIP 2:
Canned Tuna Extraordinaire

Again, I have the lovely Hanna to thank for this.

Like egg whites, I used to HATE canned tuna. Now, again, I can eat this every night without complaint.

Here’s what she does:

She cooks the veggies the same way as in the omelette above and then pours the tuna from the can into a skillet. That’s IT.

I’ve never had “tuna ala skillet” before… and I have no clue why this tastes so smooth and delicious, but it does.

If you hate canned tuna for being dry or tasteless, try this. You’ll never go back.

For the longest time, I must sadly admit, I treated my AARP Magazine as junk mail.  Because of what I have discovered I want to ask you a simple question – “Did you know that the AARP Magazine can save you money?”  I realize, of course, that you may not be old enough to be involved with AARP, but when you reach the age of 49 (the age I joined) I would suggest that you join.

If you are looking for ways to save on your cell phone plan, you can receive a free phone from Consumer Cellular when you sign up for a new service.   With this program you will receive 5 percent off your monthly service and 30 percent off selected accessories.  You will not have to sign up for a long term contract.  Call 888-437-9226 or go to http://consumercellular.com/aarp.
  10. Who is not trying to become more physically fit?  Visit AARP’s online fitness center for exercise news and motivational tips.  You can join an online group, Fat2Fit, and be part of a group that has helped almost 4,000 people lose weight over the past year.  If you would like more information on this program check out http://aarp.org/fit.
  11. Most people at this age are looking for ways to save money on eyewear.  AARP has a program that can help you save on bifocals, trifocals, lens options and frames.  You can realize these savings at LensCrafters, Pearle Vision, Sears Optical, Target Optical, JC Penney Optical and also at many private practitioners.  These savings are offered through EyeMed Vision Care and for more information you can go to http://aarphealthcare.com or call 888-352-3924.  These savings cannot be combined without other discounts.

Health insurance is very expense and there are many people who cannot afford a health plan.  This means that screening tests are not being performed.  You can receive six free health tests for such things as bone density and cholesterol, through the AARP/Walgreens Wellness Tour.  This program is visiting cities nationwide and in Puerto Rico through February 2011.  Call 866-484-8687 or go http://aarpwalghreens.com/tour.  By logging onto the website you can see where the tour will be going.

Medications are another expense that many people are having difficulty affording.  Check out AARP’s Doughnut Hole Calculator to find less expensive generic drugs.  Those who have fallen to Medicare Part D’s “Doughnuthole” will receive a $250.00 rebate check from Medicare automatically this year.  Check out http://aarp.org/doughnuthole for further information.

(Also remember that if you are having difficulty affording your medications you can contact your drug’s manufacturer and check on their assistance program.  Many pharmaceutical companies, depending on your income, will supply your medications free of charge. You will have to request the required forms and get your doctor’s approval and prescription request.  This was not in the AARP Magazine, but I speak from previous experience!)
  15. My daughter shared this eye-opening video on Continuous Chest Compress CPR,with me today. I instantly felt led to get this information out to as many people as I can, and for that reason I am posting it on my blog. I hope that you will take the time to not only read this blog, but also watch the video above. By your knowing this information, you might just have the opportunity to save someone’s life.

I was amazed to learn that more Americans die from sudden cardiac arrest in three days than died in the 9-1-1 attacks. I hope that you will feel compelled to learn the Continuous Chest Compression CPR procedure. By using this method you can double a person’s change of surviving cardiac arrest.

If you have not been comfortable with the thought of mouth-to-mouth contact you will want to learn Continuous Chest Compression CPR. This is a hands-only method. This was developed at the University of Arizona College of Medicine by research pioneers, including Gordon A. Ewy, MD, in hopes of making the odds greater that a bystander will step up to the plate and help someone suffering from cardiac arrest.

Sarver Heart Center’s video (shown above) was developed to give people easy-to-learn instructions for performing Continuous Chest Compression CPR. If you forget the name of my blog site, please just direct people to YouTube when it is also posted.

Truly, this six-minute video can mean the difference of life or death to a person in cardiac arrest. For every one minute that goes by without a person receiving help there is a 10% less chance of survival.

Below are written directions for performing Continuous Chest Compression CPR.

If you see someone collapse who isn’t responsive and has trouble breathing:

  1. Tell someone to call 911 or make the call yourself.
  2. Position the person with the back on the floor. Place the heel of one hand on the center of the chest (between the nipples) and the heel of the other hand on top of the first. Lock your elbows, position your shoulders over your hands and use your upper-body weight to “fall” downward. Lift your hands slightly each time to allow the chest wall to recoil. Try to compress at 100 beats per minute and about 2 inches deep until emergency help arrives.

Note: Mouth-to-mouth CPR still is recommended for drowning and very small children.
